Food Academy- Mexican Bean Burrito.

This recipe proves you can have a healthy, filling meal without meat.
The beans give you the protein.
Gotta have some heat in this dish so the Tabasco sauce adds this. Just don't use too much!

Mexican Beans & rice on Tortillas with Guacamole.

Mexican Bean Ingredients
·      Red kidney beans, ½ can
·      Onion, ½, diced
·      Garlic, 1 clove, crushed and chopped
·      Tomato paste, 2 tsp
·      Lemon juice, ½ tsp
·      Salt, ½ tsp
·      Cumin powder, ¼ tsp
·      Tabasco sauce, ¼ - ½ tsp.
·      Hot water, ½ cup
·      Oil for frying
Method
1.    Fry the onions and garlic in the oil until soft.
2.    Add the beans to pan and heat through.
3.    Add the tomato paste, hot water, Lemon juice and cumin powder. Bring to the boil then simmer for 15 minutes until thick.
4.    Add the salt and Tabasco sauce to taste.

Rice Ingredients
·      White rice, 1 cup, washed
·      Hot water, 2 cups
·      Salt, pinch
Method
1.    Wash the rice in a sieve.
2.    Add the rice to the water in a pot.
3.    Add a pinch of salt and bring to the boil.
4.    Boil for 5 minutes and simmer for 15 minutes.
5.    Drain through a sieve ready to mix with Mexican beans.

Guacamole Ingredients
·      Avocado, 1, flesh removed
·      Lime juice, 1 Tbsp
·      Tabasco, 1/4 tsp
·      Garlic, 1 clove, crushed and finely chopped
·      Salt, a pinch to taste.
Method
1.    Remove the flesh from the avocado.
2.    Quickly chop.
3.    Add the Lime juice and Tabasco.
4.    Mix in finely chopped garlic and salt.
5.    Mash into puree.

Tortillas Ingredients
·      Tortillas, 4 per pair
·      Lettuce, ¼
·      Carrot, 1, grated
·      Cheese, 1 ramekin, grated,
·      Mexican beans and rice
·      Guacamole
Method
1.    Fill a tortilla with a selection of the above ingredients.
2.    Fold from the bottom and from the sides to form a nice packet.

Chocolate weetbix slice.

Chocolate Weetbix Slice

Equipment
Small pot
Wooden spoon
Measuring cups/spoons
Baking tray
Baking paper
Sieve
Large Bowl

Ingredients (per pair)
Butter, 100g
Sugar, ¼ cup
Flour, 3/4 cup
Weetbix, 2, crushed
Baking powder, 1/2 tsp
Cocoa, 2 tsp
Coconut, ½ cup
Hot water, 3 Tbsp

Icing
Icing sugar, ½ cup
Cocoa, 1 tsp
Knob of butter, melted
Hot water, 3 tsp

Method
Oven on to 1800C.
1.    Melt the butter and sugar in a small pot. Don’t burn the butter!
2.    Sieve the dry ingredients (flour, cocoa, baking powder) into a large bowl.
3.    Add the crushed weetbix and coconut.
4.    Pour over the melted butter and sugar and mix together well. Add the water too.
5.    Lay the baking paper in the bottom of the baking tray.
6.    Scrape the slice mix into the tin and press down to compact it.
7.    Bake for 15-20 minutes.
8.    Make the chocolate icing.
9.    Remove the slice from the oven and let cool down in the tin for a bit before removing.
10.  Place on a plate and ice with chocolate icing.

Home made Pizza.

We did this recipe in a super short amount of time. If you have more time, allow the yeast to activate longer and let the dough rise to double in size before rolling out into the pizza base.
Use high grade/ bakers/ premium flour as it has lots of gluten which makes the dough very stretchy.
Knead the dough until it is smooth and stretchy, this will take some time and effort.
Don't put too much topping on your pizza, it takes longer to cook and makes your dough go soft.
Use Mozzarella cheese!
And don't use tinned Spaghetti!

Homemade Pizza

Equipment
Small bowl
Large bowl
Measuring cup/spoons
Rolling pin
Oven tray, oiled
Sharp knife and chopping board

Base Ingredients (per pair)
Dried yeast, 2 tsp
Lukewarm water, ½ cup
High grade flour, 1 ½ cups
Sugar, 1 tsp
Olive oil, 1 tsp
Salt, 1/2 tsp
Toppings
Tomato paste, 1 Tbsp
Onions, ½, sliced fine
Garlic, 1 clove, crushed and chopped
Cheese, Mozzarella, half cup grated
Plus toppings of your own choice (meats, sauces, vegetables)

Method
Oven on to 2000C and warmer drawer on
1.    Mix yeast with warm water and sugar in a small bowl.
2.    Sieve the dry ingredients (flour and salt) in a large bowl and make a well in the middle.
3.    Pour activated yeast and oil into the dry ingredients and mix to form a dough.
4.    Knead the dough on a clean, floured bench until smooth and elastic (10 minutes solid).
5.    Place back in an oiled bowl and let rise in the warmer drawer for 20 minutes.
6.    Prepare the toppings while you wait.
7.    After 20 minutes, remove the dough from the bowl and knock back.
8.    Using a floured rolling pin, roll out the dough to a circular shape.
9.    Place the pizza dough on the oiled oven tray.
10.  Smear the tomato paste on the base.
11. Arrange the toppings and cheese.
12. Bake for 15-20 minutes.
13. Slide off the oven tray onto a board and slice up.

Food Academy- Lemon Tart

Short Sweet Pastry

Makes 400g
Ingredients
·      Flour, 1 ½ cups
·      Salt, ¼ tsp
·      Butter, soft, 125g
·      Icing sugar, 1/3 cup
·      Egg, 1

Method
1.    Sieve flour and salt together.
2.    Rub in the butter until the texture is like crumbs.
3.    Make a well in the centre.
4.    Beat the egg with the sugar to dissolve it.
5.    Pour the egg and sugar into the well.
6.    Gently and quickly mix to make firm dough.
7.    Rest pastry before use.

Lemon Tart

Ingredients
·      Sweet pastry, 400g
·      Eggs, 5
·      Sugar, ¾ cup
·      Lemon juice, 50ml
·      Lemon zest, 2 tsp
·      Cream, 150ml
·      Icing sugar, to dredge

Method
1.    Line a flan ring with pastry, dock and bake blind.
2.    Beat eggs and sugar together.
3.    Add juice and zest and stir well.
4.    Stir in the cream.
5.    Pour into the flan case.
6.    Bake at 1500C for 30-40 minutes, until set.
7.    Allow to cool.

8.    Sprinkle with icing sugar and caramelize with heat gun.
